Not to say that this tome of cheesy concepts is entirely infallible, however. After a few trials of my own, it became startlingly clear that the recipes within could be very much hit-or-miss affairs.
Most intrigued by the idea of making block cheeses at home that could be sliced and grated at will, I started near the back of the book rather than the beginning. Firm but easily sliced, the consistency of the milk-less cheese surpassed my expectations from the moment it cooled and solidified. However, eaten straight away that same day, it struck me as having a pungent mustard flavor. Having utilized smoked paprika and hickory-smoked sea salt to impart a subtle undertone, it had just the right lightly smoke-y nuance.
But it was far from any smoked gouda I could recall. With confirmation from my cheese-eating mother, I was initially disappointed in this wild experiment, and tossed my unloved wheel into the fridge. Forgotten for two days, it managed to mature considerably, and was quite agreeably improved upon second taste.
Once upon a time, it was a lovely little number, all dressed up in ruby red paprika and begging to be shown off to friends and family. Perfectly complimented by the paprika coating, lending the pale block both a pop of color and sweetly spicy flavor, it was a delight to behold both with the eye and palate.
I only remember making two recipes. A pimento cheese spread. It was good. Mozzarella sauce? It was great hot, but terrible cold.
That was enough to make this book essential for me. Since I didn't make more recipes, I did not feel right giving it a higher score. I'm actually kind of disappointed by this cookbook, and I'm not sure if it's because I already have a mac-n-cheese recipe I love, or because I'm so not into the whole cheese thing anymore, or maybe both.

Skimmed over it and found some great ideas for non-dairy items I never knew existed. My DD outgrew her allergy and I didn't end up trying very many recipes. I was helpful so I rate it a 3 for what I learned but not more because my DD never would eat anything I made from the book.

I haven't yet gained the courage to try any of these recipes or maybe it's desperation that's required but I haven't eaten cheese for so long that I don't really miss it. Admittedly, I have only made a few of the recipes in this one, but I always come back to the one for on the French onion soup- I use my own soup recipe, but love her vegan cheese for on the toasts XD There were a couple more I've used and liked- the Welsh Rarebit and some of the fondue recipes are pretty tasty.
